I attempted to make my first pandan chiffon cake on my day off today. Unfortunately it did not rise enough and did not turn out soft and fluffy. It was rather moist, flattened and a tad heavy. Taste wise, it had enough pandan essence and coconut milk but it could have done better with a bit more sugar.
I am a bit disheartened at how the cake turned out. I suspect it had to do with the egg white mixture and folding in steps. It is also recommended on google that an aluminium tube mould pan be used over a non-stick one. Unfortunately, I could not find any that were not non-stick ones.
Anyway, we have to learn from mistakes so hopefully I will persevere and come up with a better pandan cake next time. I won't be posting the recipe until I master it. I have googled a whole heap of different recipes for the pandan cake, will see which one works best. On the upside, I had the cake with some kaya and it tasted delicious.
I could not resist taking photos of my failed pandan cake so here goes. Forgive the looks, as I had a hard time getting it out from the pan. I wiggled it too hard until part of it broke and dropped off. So please ignore my baking and presentation skills.

chiffon cake!!! I likey!! I oso have one of those moulds leh....okay...i also go make one one these days n see how it turns out...hehe..i copycat :P btw, u used a hand whisk or an electric one? I tink it makes a big difference...tt was what i heard fr one of my aunties long time ago...
sweee...i jus found some tips on chiffon cake...hope this helps..
1. use cake flour cos it will turn out to be softer
2. use ungrease pan otherwise it won't rise properly
3. beat the egg white until it's stiff..v important..otherwise won't rise well
4. bang the tin to burst the bubbles b4 putting the cake in the oven....
yes, do make it. i think u'll have more success than me :) it tasted quite good today minus the ugly look. i used an electric hand whisk.. i know hand whisking is better but get tired.
1. i'll try cake flour next time.. i used self raising flour so maybe that's also one of the reason.
2. yes i used an ungreased pan.
3. egg was beaten to soft peak.. not totally stiff
4. i did not bang the tin to burst the bubbles.
hahah so looks like 3 out of 4 were wrong. boo hoo. will try again when free :)
if all else fail, bang ur cake onto the wall! hehe...
hahaha... cannot lar... not my own house... wait landlord come after me.
anyway the cake finito liao! :) it's nice eaten with kaya :)
